Adrenal fatigue is kicking my butt again – and just when I thought I was healed. The symptoms quietly snuck up on me until one day I stopped and said, “Wait a minute…is it back?” I was feeling exhausted, my brain was cloudy, my motivation was gone. I had stopped exercising, was pigging out on junk food, going to bed late and overwhelming myself with that neverending “To Do” list. Back to square one.
I picked up the book Adrenal Fatigue: The 21st Century Stress Syndrome by James L. Wilson and started reading more about what I should do this time around to heal myself. I did it once (check out my blog post Tips to Heal Adrenal Fatigue) and knew I could do it again.
While reading I came across this simple recipe for Adrenal Recovery Soup. It’s perfect for anyone dealing with low energy or experiencing any of the adrenal fatigue symptoms (take this quiz to see if you have adrenal fatigue). About 10 minutes to prepare, 1 hour on the stove and dinner’s served! Also great reheated for lunch or dinner the next day.
Adrenal Recovery Soup
16 oz. green beans (I used frozen organic green beans)
1 cup chopped celery
1 zucchini, sliced
1 medium onion, chopped
1 cup tomato juice
1 cup spring water
2 tbsp. raw honey
1 tsp. paprika
1 cup chicken broth (I used organic veggie broth)
3-4 garlic cloves, minced (I added this in because I love garlic & it boosts the immune system)
Handful of spinach added in the last 5 minutes of cooking (Also added this in)
Combine ingredients and simmer for one hour until vegetables are tender. Pepper to taste.
You can also add a dash of dulse flakes before serving for added minerals your body craves when dealing with adrenal fatigue.
